Add flavor to boring roast chicken. Rather than using a roasting rack, place thick slices of onion in the bottom of the pan, and place the chicken on top of them. The chicken juices will be absorbed by the onion, creating a caramelization on the bottom of the pan. After roasting, remove the chicken, add a little water to the pan and cook on high heat for a few minutes. This will create a tasty sauce for your chicken.

After cooking with a large amount of garlic, rub both hands on your stainless steel sink before washing them. Use a vigorous scrubbing action. This will help to get rid of that lingering garlic scent on your skin. It will not leave a scent on your stainless steel sink.

If you are always in the kitchen cooking, invest in a knife sharpener. This will ensure that your utensils are sharp at all times, which will give you the ability to maximize the quality of your cuts. Keeping your utensils up to par is very important when cooking in the kitchen.

Take the guesswork out of reducing liquids. When a recipe calls for you to cook until the liquid is reduced by a certain amount, dip the handle of a wooden spoon into the liquid to mark the depth. This will leave a line on the wooden spoon. Later, you can dip the spoon again to see how much the liquid has actually reduced.

Leave the bone in a roast to speed up cooking. By leaving the bone in, heat moves to the inside of the meat faster, speeding up the cooking process. Because the bone transmits heat, the entire roast cooks more evenly throughout the cut of meat by leaving it in rather than removing it.

Keep a few cut up, washed, and prepared vegetables in your freezer. This will reduce your prep time when you’re cooking a recipe. Onions and peppers are great to freeze. Just buy them fresh, wash and cut them when you have time, and store them in individual zip lock bags.

To discover when oil is really hot enough and ready for the food, look to its’ surface. If it is no longer completely smooth and appears to be shimmering it is hot enough. When oil is allowed to over-heat it actually starts breaking down and releasing unpleasant compounds and will begin to smoke, so know when to say when!

Try to cook when you have a clear head so that you can maximize the quality of your food. If you are currently having emotional problems, do not put yourself in a dangerous situation where you can get hurt. Always have a clear conscience when you are planning to cook a meal.

If you are making meatloaf or meatballs, it is important to taste the meat before you cook it. You want to make sure that it has the perfect amount of seasoning. You can taste it by making a small patty and frying it on a pan, almost like a hamburger.
