Keep your herbs in a place that is both dark and cool. Light, heat, and humidity will cause their flavor to weaken. A lot of the time, you can expect an herb or a space to retain flavor for about a year. Spices that have not been ground may still be worth using for three years or a little more. Their changes at longevity increase with proper storage.

When you are making stock, make a lot of it. Then save it in a plastic zip bag, date it and freeze it. That way you can pull it when you would like to make a soup. You can use it to boil some veggies in. Having some in the freezer will make preparing healthy meals very much easier.

To increase the texture and quality of the pasta that you cook at night, make sure that you finish cooking with the pasta in the pan with sauce. This will help to absorb the sauce so that it blends in properly and tastes great when you sit down to the table and eat.

Saute tired salad greens. If your salad greens have seen better days, don’t discard them – saute them! Salad greens such as radicchio, arugula and endive make a tasty side dish when sauteed. Cook them quickly in olive oil, chopped garlic and sea salt. Sprinkle with a little bacon and goat cheese, and you will be happy that you didn’t throw away those unused salad greens!

Rising the dough requires patience and an optimal environment. Don’t just leave the bowl with the dough where it’s not in your way. Create the perfect conditions to get the best results. Find a place with constant, warmer temperature without draft. Constantly changing temperature and draft makes the dough rise slowly and unevenly.

Brownies made for a bake sale are much more enticing when potential buyers can see what goodies are in them. To accomplish this task, when the pan of brownies has about eight minutes left of baking time, remove the pan from the oven, cover the top with a layer of miniature marshmallows and then sprinkle chocolate chips, butterscotch chips, nuts, caramel chunks and anything else you like to add to your brownies on top of the marshmallows. Put the pan back into the oven for the final few minutes of baking to allow the marshmallows to soften and toast and give time for the chips to melt. When the pan comes out, you will have an irresistible pan of brownies that look as good as they taste.

To discover when oil is really hot enough and ready for the food, look to its’ surface. If it is no longer completely smooth and appears to be shimmering it is hot enough. When oil is allowed to over-heat it actually starts breaking down and releasing unpleasant compounds and will begin to smoke, so know when to say when!
